Ingredients
- 2 small sweet potatoes, cut into 1 inch chunks
- 1 onion, cut into 1 inch wedges
- 6 sprigs fresh thyme
- 2 tbsp olive oil
- kosher salt & pepper
- 1 3 1/2-4 lb chicken, cut up
- 4 tbsp maple syrup
Preparation
Step 1
Heat oven to 400. In a 9x13 baking dish, toss sw pot, onion, thyme, oil, 1/2 tsp salt, and 1/4 tsp pepper. Pat chicken dry with paper towels, season with 1/2 tsp salt and 1/4 tsp pepper.
