Fat Free Oatmeal Raisin Cookies

Ingredients

  • 1 cup flour
  • 1 cup quick-cooking oats
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 2 egg whites
  • 1/3 cup corn syrup, light or dark
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins

Preparation

Step 1

Spray cookie sheets with cooking spray. In a large bowl, combine dry ingredients. Stir in egg whites, corn syrup, and vanilla until well mixed.

Add raisins. (Batter will be stiff.) Drop by rounded teaspoonfuls onto prepared cookie sheets.

Bake in 375 degrees F oven for 10 minutes, or until firm. (Do not overbake.) Remove; cool on wire rack.
