Green Bean Salad, Dijon

Ingredients

  • 1 lb. green beans, trimmed
  • 2 T olive oil
  • 1 red onion, thinly sliced, 1 1/4 c
  • 1 clove minced garlic
  • 1 T apple cider vinegar
  • 1/2 t salt
  • 1/4 t pepper
  • 1 c cherry tomatoes, halved

Preparation

Step 1

Cook green beans until just tender (5 mins). Drain. In skillet, heat oil. Add onion; cook until lightly browned. Add garlic, cook until soft. Stir in vinegar; cook 30 seconds. Remove from heat, whisk in mustard, salt & pepper. In bowl, combine green beans, onion mixture and tomatoes; toss to combine.
