Ingredients
- 2 lbs. green beans, trimmed
- 2 T butter
- 1 bunch scallions, thinly sliced
- 10 oz. pkg sliced mushrooms
- Salt & pepper
- 3 T flour
- 1 c chicken broth
- 1 c heavy cream
- 1/2 c crushed potato chips
Preparation
Step 1
Fill skillet with 1/2" water. Bring to boil, add beans, lower heat, cover & simmer 4 mins. Drain and rinse with cold water until cool. Place in casserole dish. Melt butter; add scallion whites & mushrooms; season with salt & pepper, cook 4 mins. Stir in flour for 1 min. Stir in broth & cream until thickened. Season with salt & pepper; sprinkle with scallion greens. Remove from heat. Spoon sauce over beans & sprinkle chips on top.
