Jennie's Rhubarb Pie

Ingredients

  • 2 1/2 cups rhubarb, thin cut
  • 1 1/4 cup white sugar
  • 4 tablespoons melted butter
  • 3 tablespoons flour
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 2 eggs, separated
  • 1 unbaked pie crust

Preparation

Step 1

Beat egg yolks until light yellow color, set aside.

Beat egg whites until stiff, add beaten egg yolks, mix in all ingredients. Pour into unbaked pie shell. Bake 15 minutes at 400, then bake for 45 minutes ar 325, let brown lightly.
