Ingredients

  • Cooking Spray
  • 1 sheet frozen puff pastry (1/2 of 17 oz. package), thawed
  • 1/2 c prepared pesto
  • 1 c (4 oz.) shredded mozzarella cheese
  • 1 can (14.5 oz.) Hunt's Whole Peeled Tomatoes, drained, cut into 1/4" thick slices
  • Thinly sliced fresh basil

Preparation

Step 1

1. Preheat oven to 400°

2. Spray rimmed baking sheet with cooking spray; set aside.

3. Unfold puff pastry onto lightly floured surface; roll out to 12" square. Crimp edges; place on prepared baking sheet.

4. Spread pesto evenly over puff pastry. Sprinkle with 1/2 cup cheese then add tomato slices in a single layer. Finish by topping evenly with remaining cheese.

5. Bake 17-20 minutes, or until golden brown. Garnish with some fresh basil, if desired. For 'small bites', cut into 16 pieces. Serve immediately.
