Ingredients
- 2 15 oz cans chickpeas, rinsed & drained
- 1/2 red onion, finely chopped
- 1/2 English cucumber
- 1 jar roasted red or yellow peppers, coarsely chopped or sm yellow pepper cut 1/4 in dice
- 1/3 c fresh peas
- 8 oz feta, crumbled
- 1 clove garlic, minced/crushed
- 1 handful fresh basil leaves, torn
- 2 T fresh lemon juice ( can add the zest for more lemon flavor)
- 1/4 c EVOO
- Kosher salt, optional
- Fresh ground black pepper
Preparation
Step 1
Combine chickpeas, onion, cucumber, peppers, peas, feta, garlic, basil, lemon juice, lemon zest & oil in salad bowl. Taste & add salt & pepper as needed. Depending on how salty feta is, may not need more salt.
Serve right away or can refrigerate up to a few hrs.
