Sausage with Petit Pois (aka Green Peas)

Ingredients

  • 1 package of sausage
  • 2 Tbls. flour
  • 1 medium onion chopped
  • 3 15 oz. cans small green peas (petit pois) drained
  • 3 cups hot water
  • salt and pepper
  • hot cooked rice

Preparation

Step 1

In a large saucepan, cook sausage over low heat until slightly browned. Drain on paper towels and cut into slices.

Reserve 2 Tbls. of fat from sausage and add flour and cook stirring constantly until light brown. Add onion and cook, stirring often until tender...5-6 minutes. Add peas, sausage, and 3 cups hot water. Bring mixture to boil and reduce heat and simmer 35-40 minutes, stirring occasionally. Season to taste with salt and pepper and serve over rice!
