Ingredients
- 2 large sweet onions, thinly sliced
- 1 c dry red wine
- 2 cans beef broth (14.5 oz. cans)
- 5 oz. seasoned croutons (2 c)
- 4 thick slices swiss cheese
Preparation
Step 1
In deep skillet, heat 2 T EVOO. Add onions, cook until translucent (15 mins) Add wine & bring to boil. Pour in broth & simmer 10 mins; season with pepper. Preheat broiler. Divide soup among 4 bowls; top with 1/4 of the croutons & a slice of cheese. Broil until cheese is bubbly and golden; about 1 min.
