Cream of Tomato & Basil Soup

Ingredients

  • 3 t olive oil
  • 2 t garlic
  • 3 1/2 T diced onion
  • 4 T tomato paste
  • 3 1/2 c diced tomatoes
  • 1/2 c whipped cream
  • 2 t basil
  • salt & pepper to taste
  • sugar to taste

Preparation

Step 1

In medium pot, sweat garlic and onion in olive oil until translucent. Add tomato paste & cook for 2 mins. Add diced tomatoes & simmer for 1/2 hour. Add basil and cream, puree until smooth and add seasonings.
