Ingredients
- 4 cornish hens (1 1/2 lbs ea)
- 1 tsp fresh ground pepper
- 4 tbl unsalted margarine
- 4 stalks finely chopped celery
- 1/2 c chicken soup; 1/2 c water
- 1/2 lb coarsely chopped mushrooms
- 2 tsp salt
- 1 tsp paprika
- 2 lg finely chopped onions
- 3 cloves minced garlic
- 4 finely broken matzos
- 1 egg well beaten
Preparation
Step 1
Wash hens inside & out. Sprinkle cavity with salt, pepper & paprika. In a large fry pan, melt margarine & sauté onions & celery. Add garlic & stir to mix. Add mushrooms & cook 5 mins. In a bowl soak matzo in chicken soup. Add to vegs. Stir in egg. Add seasoning. Mix well; let cool. Spoon stuffing into cavity of hens. Truss legs with string. Brush with addle melted margarine. Place hens in a large roasting pan; add 1/2 c water;cover with foil; bake in preheated 350 degree oven 45 mins. Bake uncovered 15 mins basting occasionally
