Chicken, Honey Mustard with Potatoes

Ingredients

  • 3 T honey
  • 3 T spicy brown mustard
  • 2 T vegegtable oil
  • 2 limes, 1 juiced & 1 cut into 8 wedges
  • 8 skinless, bone -in chicken thighs
  • 2 large baking potatoes
  • 3 T EVOO
  • Salt & Pepper
  • 2 T chopped fresh chives

Preparation

Step 1

Combine honey, mustard, oil & lime juice in plastic bag. Add chicken and marinate at room temp 20 mins. In saucepan, combine potatoes & salted water; bring to boil. Cook for 20 mins. Drain, cool. Slice into 1" wedges. Toss with EVOO; season with Salt & pepper. Preheat grill; add chicken & potatoes,cover and cook 10 mins each side. Serve with lime wedges. Sprinkle chives over potatoes.
