Chicken, Apricot-Balsamic Glazed

Ingredients

  • 1/2 c apple juice or cider
  • 1/4 c apricot preserves
  • 1/4 c balsamic vinegar
  • EVOO, for drizzling
  • 4 chicken breast halves
  • Salt and pepper

Preparation

Step 1

Preheat grill to medium-high. In sauce pan, bring juice, preserves & vinegar to boil. Lower heat, cook until thick & syrupy, 7-8 mins. Drizzle EVOO over chicken & season with salt & pepper. Grill until cooked through, 6 mins each side. Brush the chicken with the apricot glaze.
