Mixed Greens with Mango and Avocado

Ingredients

  • 2 ripe avocados, diced
  • Juice of 1 lime
  • Salad greens of your choice (about 8 cups)
  • 1 ripe mango, diced
  • 1/4 cup balsamic vinegar
  • 3/4 cup extra-virgin olive oil
  • 1 tsp Dijon mustard
  • Salt & black pepper to taste
  • 1/2 crumpled feta cheese (optional)

Preparation

Step 1

1. In medium bowl, toss avocado with lime juice immediately after dicing. In lg serving bowl, toss salad grens with mango and avocado (drained of the lime juice).
2. In a sm bowl, whisk together vinegar, oil, mustard and salt and pepper. Toss salad with enough vinaigrette to coat. Sprinkle with feta cheese, if desired, or serve cheese on the side.
