Sun Dried Tomato Sauce

Ingredients

  • 1/4 cup extra virgin olive oil
  • 4 anchovies, chopped
  • 1 clove garlic
  • 1 tbsp capers, rinsed
  • 1 cup oil pack sun dried tomatoes
  • 4 tbsp dry red wine
  • black pepper to taste
  • Grated cheese for serving

Preparation

Step 1

In a skillet, heat oil. Add garlic and anchovies and stir with wooden spoon until anchovy dissolves.

Add capers, tomatoes and wine, cook 2 minutes, stirring often.

Transfer to food processor and pulse into bits. Return sauce to skillet and reheat before serving.
