Ingredients
- 1 lb. Spaghetti
- 3 T. olive oil
- zest and juice of 2 lemons
- 3 garlic cloves, thinly sliced
- 2 jalapeno peppers, seeded and thinly sliced
- 1 1/2 cup frozen peas, thawed
- 1 tsp. Kosher salt
- 1/8 tsp. pepper
- 1/3 cup parmesan
Preparation
Step 1
1.Bring pot of light salted water to a boil. Add the pasta and cook according to package directions, Drain and set aside.
2.Heat 2 T. of the olive oil in a large sauté pan over medium low heat.
3.Add the lemon zest, garlic and jalapenos and cook until lightly browned.
4.Add the pasta, lemon juice, peas, salt, pepper and remaining oil.
5.Cook until heated through.
6.Add Parmesan, toss well and serve.
