Ingredients
- 2 lbs. Small red potatoes
- 2 T. coarse salt
- 2 T. unsalted butter
- 2 T. chopped parsley
- Freshly ground pepper
Preparation
Step 1
1.Using a peeler or paring knife, peel middle of each potato.
2.Place potatoes in a large saucepan and cover with cold water. Bring to a boil over high heat, reduce heat to medium low.
3.Cook until fork inserted into the center of the potatoes meets only slight resistance, about 20 minutes.
4.Drain potatoes, return to warm saucepan.
5.Toss with butter and parsley and season with pepper.
6.Transfer to a serving dish and serve immediately.
