Soy Sesame Cucumber Salad

Ingredients

  • 3 Kirby cucumbers
  • 2 cloves garlic, minced
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp rice vinegar
  • 1/4 tsp organic sugar
  • Toasted sesame seeds for garnish
  • Japanese pepper for garnish

Preparation

Step 1

1. Cut cucumbers into half moons, about 1/2 " thick.
2. Toss with all the seasoning except for sesame seeds and Japanese pepper
3. Refrigerate 1 hour
4. Just before serving, sprinkle with sesame seeds and Japanese pepper
