Ingredients
- 2 c flour
- 1 1/2 c sugar
- 2 t baking powder
- 2 t cinnamon
- 1 t baking soda
- 1 c canola oil
- 4 large eggs, room temperature
- 2 c shredded carrots
- 8 oz. crushed pineapple, drained
- 1 1/4 c pecans, chopped (save 1/2 c)
- 3/4 c coconut
Preparation
Step 1
Heat oven to 350 F. Grease & flour 2 9" round pans. Stir flour, sugar, baking powder, cinnamon & baking soda until blended. Make a well, put oil & eggs in well & stir with spatula. Stir in remaining ingredients. Pour into pans. Bake 35-40 mins. Cool 10 mins. on wire rack. Frost with cream cheese icing.
