Pumpkin Bread

This is a recipe that I got from my mom and it's the pumpkin bread that I always make. I make it in a bundt pan and use the caramel icing that is in my miscellaneous cookbook.

Ingredients

  • 1 tsp nutmeg and cinnamon
  • 3 cup sugar
  • 1 cup oil
  • 4 eggs
  • 1/2 tsp salt
  • 1 cup pumpkin
  • 2/3 cup water
  • 2 tsp baking soda
  • 3 cups flour
  • Nuts and raisins are optional

Preparation

Step 1

Mix nutmeg, cinnamon, sugar, oil, eggs, and salt. Then add pumpkin, water, baking soda, and flour and stir just until blended.

Add raisins and chopped nuts if so desired. ( I always do)

Bake at 350 degrees in a greased bundt pan for 1 hour. Sometimes I put the nuts and the caramel icing in the bottom of the pan first and then add the batter.

You may ice with caramel icing when done if you like.
