Ingredients
- 2 to 3 large sweet potatoes peeled and cut in chunks
- 2 medium sweet onions
- 3 T olive oil
- 1/4 c amaretto
- 1 t dried thyme
- salt and pepper to taste
- 1/4 c toasted nuts (walnuts or almonds)
Preparation
Step 1
heat oven to 425
toss first 6 ingredients in shallow medium size baking dish
cover and bake 30 mins
uncover and bake 20 mins more
sprinkle with nuts
