Gluten-free Cornbread

Ingredients

  • 1 c. medium stone ground cornmeal
  • 1/2 c. white rice flour
  • 1/2 c. tapioca flour
  • 1/2 c. finely grated parmesan cheese
  • 1 t. xanthum gum
  • 3 T. organic sugar
  • 1 T. baking powder
  • 1 t. kosher salt
  • 1/4 t. cayenne pepper
  • 2 eggs
  • 1 c. milk
  • 1/4 c. sour cream
  • 1/4 c. melted butter

Preparation

Step 1

Combine all dry ingredients, including grated cheese, in bowl, whisk to blend.

In another bowl whisk the wet ingredients together, adding the melted butter after they've been combined.

Using a spatula, add wet ingredients to dry, combine until smooth, but don't overmix.

Grease 9 x 9 pan

Pour batter in pan and bake at 425 farenheit for 25-30 minutes, or until toothpick inserted in center comes out clean.

Serve with honey and butter
