Ingredients
- 3 small to medium size bananas
- 2 c sugar
- 4 T butter
- 1 1/2 c flour
- 2 t baking powder
- 1/2 t coarse salt
- 1/2 c clarified butter
- 2 eggs
- 1/2 c buttermilk
- 1 t vanilla
Preparation
Step 1
Preheat oven to 325. Halve bananas lengthwise; then crosswise. In a saucepan, combine 1 c sugar with 2 T water. Melt over high heat; swirling pan until sugar caramelizes. Add butter and stir to combine. Pour into 8" pan. Arrange bananas cut-side down. Sift flour, baking powder & salt; set aside. Combine remaining sugar & clarified butter. add eggs, one at a time. Add buttermilk and vanilla. Add flour 1/3 at a time.
Pour batter over bananas and bake until cake springs back about 50 minutes. Allow to cool 5 mins, then invert onto serving plate. Serve warm.
