Tomato Onion Quiche

Ingredients

  • 1 sheet refrig. pie pastry
  • 1 C (4 oz.) shredded mozzarella cheese
  • 1/2 C. sliced sweet onion
  • 2 small plum tomatoes, seeded and thinly sliced
  • 3 med. fresh mushrooms thinly sliced
  • 1/4 C. shredded Parmesan cheese
  • 3 eggs
  • 1/2 C. half and half cream
  • 1/2 ground mustard
  • 1/2 tsp. dried basil
  • 1/2 dried oregano
  • 1/2 tsp. dried thyme

Preparation

Step 1

1. Layer pie dough with half of mozzarella cheese, onion and tomato in pastry. Top with mushrooms; layer with remaining mozzarella cheese onion and tomato. Sprinkle with parmesan cheese. In a small bowl combine the eggs, cream, mustard and herbs; pour over top.

2. Bake at 350 for 45-55 min. or until knife inserted near center comes out clean.
