Ingredients
- 2 T olive oil
- 1/2 small onion chopped
- 2 cloves garlic minced or chopped
- 2 cans 14 oz each chicken broth
- 2 c uncooked orzo
- 1/2 c grated parmesan
- salt and pepper
Preparation
Step 1
heat oil in a medium saucepan with a cover over med heat
add onion and garlic and saute 2-3 mins
add broth and bring to a boil
stir in orzo and return to a boil
cover and reduce heat to simmer until liquid is absorbed
uncover and stir in cheese and season with salt and pepper
**may stir in fresh herbs for more flavor
