Pasta with chicken sausage peppers and escarole

Ingredients

  • 12 oz wheat pasta
  • 1 t evoo
  • 1 med onion chopped
  • 1 med red pepper chopped
  • 5 cloves garlic
  • 1 pd italian chicken sausage removed from casing and rolled in tiny balls
  • 1 med head escarole rinsed and torn in bite size pieces
  • 1/4 c grated parmesan
  • 1/4 t cr red pepper
  • salt and pepper
  • can diced tomatoes optional

Preparation

Step 1

cook pasta and reserve 1 c before draining
meanwhile heat lg skillt with cover on med and add evvo-add onion and garlic salt and pepper
cook til soft 5 mins add sausage and and cook 8 mins
add diced tomatoes if using
add escarole and cover and cook 2 min
uncover and cook and stir 3 minutes
add cooked pasta, red pepper, reserved water and cheese
toss well and transfer to large bowl
