Barbecue Pork and Penne Skillet

This is a recipe from the Taste of Home award winner's cookbook, 2014.

Ingredients

  • 1 pkgs. (16 oz.) penne pasta
  • 1 C chopped sweet red pepper
  • 3/4 C chopped onion
  • 1 TBS. butter
  • 1 TBS. olive oil
  • 3 garlic cloves, minced
  • 1 Carton (18 oz. refrigerated fully cooked barbecued shredded pork
  • 1 can (14 oz.) diced tomatoes with mild green chillies undrained
  • 1/2 C beef broth
  • 1 tsp. ground cumin
  • 1 tsp. pepper
  • 1/4 tsp. salt
  • 1 1/4 C shredded cheddar cheese
  • 1/4 C chopped green onions

Preparation

Step 1

1. Cook pasta according to package. Then, sauté red pepper and onion in butter and oil until tender. Add garlic; sauté 1 min. longer. Stir in pork, tomatoes, broth cumin pepper and salt. Heat through.

2. Drain pasta. Add pasta and cheese to pork mixture. Sprinkle with green onions.
