Ingredients
- 3 bunches fresh rapini
- 3 tbs. olive oil
- 6 garlic cloves, thinly sliced
- salt and pepper
Preparation
Step 1
Put a large pot of water on to boil. Cutt off the rough ends of the rapini, rinse rapini clean, then add to the boiling water, along with a couple of tsp. of salt. Boil for 2 to 3 minutes.
Pour rapini into a colander and rinse with cold water until cool. drain, squeeze out extra water, towel dry and but into bite sized pieces.
In a large skillet, heat olive oil and add garlic. Let them crisp up. Then add blanced rapini to pan, along with salt and pepper, toss it around for a minute and tast for seasoning.
