Spinach Fettucine Alfredo with Sun-Dried Tomatoes

  • 16 oz. spinach fettucine
  • 1 c light cream
  • 1/4 c marinated, sun-dried tomatoes, chopped
  • 3 garlic cloves, chopped
  • 4 Tbsp butter
  • 1/4 tsp salt
  • 1/4 tsp white pepper
  • 1/2 c parmesan cheese

Preparation

Step 1

Cook fettucine according to directions. meanwhile, combine cream, tomatoes in garlic in blender, puree until smooth. In a small pan over medium heat melt butter; add tomato-cream mixture, stir until hot. Add salt and pepper. Transfer fettucine to large bowl, pour over sauce, top with cheese, serve immediately
