Ingredients
- 12 oz small new potatoes, quartered
- 12 oz green beans, trimmed
- 2 T extra virgin olive oil
- 1 T red wine vinegar
- 2 t dijon mustard
- 2 scallions, thinly sliced
- 1 t finely chopped fresh thyme or parsley
Preparation
Step 1
Add potatoes to a pot of salted water, bring to a boil, and cook until almost tender, about 10 min. Add beans and cook until potatoes and beans are tender, about 5 minutes.
Whisk oil, vinegar, mustard, scallions, and thyme in large bowl. Season dressing to taste with salt and black pepper.
Drain potatoes and beans well. Transfer to bowl with dressing and toss. Serve warm or at room temperature.
