Grilled Achiote Shrimp

Ingredients

  • 1/4 cup olive oil
  • 2 tablespoon garlic; chopped
  • 1/2 teaspoon achiote powder
  • 1/2 lemon zest
  • 1/2 orange zest
  • 1/4 cup fresh cilantro; chopped
  • 2 tablespoon fresh lemon juice
  • 2 tablespoon fresh orange juice
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 pound jumbo shrimp

Preparation

Step 1

Heat oil, garlic, achiote powder, and zests in a saucepan over low just
until bubbles form at the pan's edge. Let mixture steep off heat, 15
minutes.

Whisk cilantro, lemon juice, orange juice, salt and pepper into oil
mixture.

Transfer marinade to a resealable plastic bag. Add shrimp and marinate in
the refrigerator, no longer than 45 inutes. Thread onto skewers.

Preheat grill to medium, Brush grill grate with oil.

Grill shrimp until opaque and cooked through, with grill marks on both
sides, about 1-1/2 minutes per side.
