Big Fish Bruschetta

Recipe obtained when taking a cooking class at a local restaurant. Recipe downsized from restaurant size, so measurements may seem a bit odd. (Original quantities included in parentheses.)

Ingredients
- 1 3/4 c plum tomatos, diced (16 c)
- 0.8 oz red onion, diced (1 onion)
- 1 T basil (1/2 c)
- 1 1/2 T EVOO (3/4 c)
- 1/4 t ground pepper (3/4 T)
Preparation
Step 1
Combine first three ingredients. Mix oil, slat & pepper; pour over tomato mixture and stir to combine.
Serve with Big Fish Garlic Bread
