Healthy Kugel with carmelized apples and raisins

Ingredients

  • 6 oz. wide egg noodles
  • 2 c. low fat cottage cheese
  • 2 eggs, plus 2 egg whites
  • 1 t. ground cinnamon
  • 1/2 t. salt
  • 1 c. raisins
  • 4 Golden Delicious apples, peeled and cored (1.5lb.)
  • 2 T. butter
  • 1/4 c. sugar
  • 1/2 c. breadcrumbs

Preparation

Step 1

Preheat oven to 350. Coat 9"x13" baking dish with cooking spray.

Cook egg noodles in boiling salted water for 4-5 minutes. Drain.

Whisk together cottage cheese, yogurt, eggs, egg whites, cinnamon, and salt in a bowl. Fold in egg noodles and raisins.

Quarter each apple. Slice each quarter into thirds. Set aside.

Melt butter in large skillet over med-high. Add apples. Sprinkle with sugar, cook 4 minutes without stirring. Gently flip apples and cook 4 mins more until softened and golden on both sides, turning once or twice.

Spoon noodle mixture into prepared baking dish and sprinkle with breadcrumbs. Bake 40 minutes, or until breadcrumbs are golden brown. Cool 15 minutes before slicing. Serve hot or room temp.
