Recipe obtained when taking a cooking class at a local restaurant. Recipe downsized from restaurant size, so measurements may seem a bit odd. (Original quantities included in parentheses.)

Ingredients
- 5 lb red skin potatoes, boiled, whole (20 lb)
- 1 stick margerine (1 lb)
- 2 sticks unsalted butter (2 lb)
- 2 T fresh basil, chopped (1/2 c)
- 1 1/4 oz blackening spice (5 oz)
- 1 c half & half (1 qt)
Preparation
Step 1
Combine all ingredients adding half & half to consistency you want. Taste and adjust seasoning.
