Cucumber-Blue Cheese Dip

Ingredients

  • 1 pkg. (3 oz) cream cheese
  • 1/2 English (seedless) cucumber, unpeeled and cut into 1" chunks (about 1 1/2 cups)
  • 1/2 cup refrigerated blue cheese salad dressing
  • green onions, radishes, toasted pita wedges

Preparation

Step 1

In food processor with knife blade attached, pulse cream cheese and cucumber until cucumber is coarsely chopped.
Transfer dip to serving bowl; stir in dressing until combined. If not serving right away, cover and refrigerate dip up to 4 hours (If prepared more than 4 hours ahead, cucumber may cause dip to become watery).
Serve with green onions, radishes and pita wedges.
