Kiwi chicken

Ingredients

  • 8 chicken thighs
  • salt and pepper
  • clove garlic
  • 4 kiwis
  • 1 t green hot sauce
  • 1 t honey
  • 2 tsp evoo

Preparation

Step 1

1) preheat oven to 400. season chicken with salt and pepper; roast on foil lined baking sheet til juices run clear, about 45 minutes.

2) meanwhile in pot of boiling water, blanch garlic for 1 minute, drain , peel and mash with 1/4 tsp salt.

3) halve 3 kiwis lengthwise and scoop seeds into mesh sieve over a bowl. press to extract the juice. scrape remaining kiwi flesh into chopper, add kiwi juice, garlic paste, hot sauce and honey; puree. peel and chop remaining kiwi

4) serve chicken with sauce and chopped kiwi
