Ingredients
- 1 &1/4 c orzo
- 2 tsp EVOO
- 1/4 tsp each salt and pepper
- 3 tbls Balsamic vinegar
- 3 c chopped spinach
- may substitute low sodium vegitable or chicken broth for water when cooking the orzo
Preparation
Step 1
Cook orzo according to directions. When done, drain orzo and reserve 1/4 c cooking liquid
heat saute pan over med. high heat
add 2 tbls Evoo
add orzo, salt and pepper, cook 1 minute, stirring constantly
stir in reserved cooking liquid, balsamic v. and chopped spinach.
cood 2 minutes until spinach wilts.
