Ingredients

- 1 roll(18oz) Refrigerator sugar cookies
- 1/4 cup finely chopped pistachio nuts
- 1 tablespoon grated lemon peel
- 1 tablespoon lemon juice
- 2 tablespoon all purpose flour
- Glaze and Garnish
- 1 cup powdered Sugar
- 2 to3 tablespoon fresh lemon juice
- 1 tablespoon finely chopped pistachio nuts
Preparation
Step 1
Heat oven to 350. Line a 13x9 pan with foil, extending the foil over the sides of the pan. Spray foil with cooking spray.
In a large bowl break up cookie dough and stir in 1/4 cut nuts, lemon peel, 1 tablespoon lemon juice and the flour until well blended. Place the dough in the pan and press evenly in the pan.
Bake 17 to 21 minutes or until golden brown. Cool completely.
In a small bowl mix powdered sugar and 2 to 3 tablespoons lemon juice until smooth. Spread the glaze over the crust. Sprinkle the remaining nuts over the top. Let stand and let glaze set about 15 minutes. Lift the foil out of the pan and cut into squares.
