Ingredients
- 1 Can of Mandarin Oranges
- 3/4 cup Orange Juice
- 1/2 cup small dice of watermelon
- 1/2 tsp grated ginger
- 1 1/2 tbsp finely diced red onion
- 2-3 tsp finely chopped Jalapeno
- 1/2 tsp salt
- 1 1/2 tsp chopped fresh mint
- Ahi Tuna
Preparation
Step 1
• Combine all ingredients except the watermelon and tuna in a large bowl (Chill for a 3 hour min.)
• At dinner service add the watermelon and mint 2 hours prior to serving
• 5 min before serving add the tuna
• Fold together, place in ring mold on plate and garnish with extra mint.
Serve with reduction of juices if desired.
