Ingredients
- 1 1/2 pounds sweet potatoes
- 2 tablespoons olive oil
- 1 tablespoon sesame seeds
- few scallions lightly spiced
- 2 tablespoons light soy sauce
- 2 teaspoon dijon and favorite mustard
- 2 teaspoons of honey
Preparation
Step 1
preheat oven to 400 degrees
Peel the sweet potatoes and cut into chunky sticks. Toss them with olive oil, place in shallow roasting pan and then sprinkle sesame seeds.
Back 45 minutes until crisp and brown. Turn sweet potatoes into serving dish and dress with mixture of soy sauce, mustard, and honey. Serve hot sprinkle with sliced scallions.
