Martinique Potatoes

Ingredients

  • 4 baked potatoes
  • 2 Tbls melted butter
  • 3 Tbls milk
  • 1 egg, separated
  • 2 tsp parmesan cheese
  • 2 thin onion slices, finely chopped
  • 2 shakes of nutmeg
  • salt and pepper, to taste

Preparation

Step 1

Remove skin from potatoes and mash with butter, milk, cheese, onion, nutmeg and salt and pepper.
Cook, stirring constantly over med. heat for about 3 minutes.
Gradually fold in stiffly beaten egg whites.
Roll into golf-ball size balls.
Bake on buttered cookie sheet until browned.

Bake at 375 for 20 to 30 minutes
