Ingredients

  • Frosting:
  • 1 1/4 cups all purpose flour
  • 1/2 cup cornstarch
  • 1/3 cup powdered sugar
  • 3/4 cup Land O Lakes butter, softened
  • 1 tsp grated lemon peel
  • 1 tbsp. lemon juice
  • 3/4 cup powdered sugar
  • 1/4 cup Land O Lakes butter, softened
  • 1 tsp grated lemon peel
  • 1 tsp lemon juice

Preparation

Step 1

In large mixer bowl, combine all cookie ingredients. Beat at low speed, scraping bowl often, until well mixed (2-3 minutes).
Divide dough in half. Shape each half into 8 x 1" roll. Wrap in plastic food wrap. Refrigerate until firm (1-2 hours).
Heat oven to 350 degrees. With sharp knife, cut each half into 1/4" slices. Place 2" part on cookie sheets. Bake for 8-12 minutes or until set. (Cookies will not be brown). Cool completely.
In small mixer bowl combine all frosting ingredients. Beat at medium speed, scraping bowl often, until fluffy (1-2 minutes). Frost cooled cookies.
