Hawaiian Isle Carrot Bread

Ingredients

  • 1 can (8 1/4 oz.) crushed pineapple
  • 1 1/2 cups sifted flour
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. each: baking soda, cinnamon
  • 1/4 tsp. nutmeg
  • 1 cup unsifted whole wheat flour
  • 1/4 cup wheat germ
  • 2 large eggs
  • 1/2 cup brown sugar, packed
  • 1 cup grated raw carrots
  • 2 tbsp. syrup from pineapple
  • 1/2 cup vegetable oil

Preparation

Step 1

Drain pineapple and save 2 tbsp. syrup. Sift flour, baking powder, baking soda, salt and spices into a bowl. Stir in whole wheat flour and wheat germ. In another bowl, beat eggs. Stir in sugar, carrots, syrup and oil. Add to dry mixture. Mix well. Pour into 2 loaf pans. Bake below center of oven at 350F for 45 mins. Let stand in pan 10 mins. Remove and cool on wire rack.
