Raspberry Dessert

This dessert can be made with Junket Danish Dessert or Raspberry Jello.

Ingredients

  • 2 Cups Flour
  • 1/2 Cup Brown Sugar
  • 1 Cup Margarine
  • 8 oz Cream Cheese
  • 1 tsp Vanilla
  • 1 Cup Powder Sugar
  • 1 tub Cool Whip (small tub)
  • 2 boxes Raspberry Junket Dessert
  • 2-2 1/2 Cups fresh Raspberries

Preparation

Step 1

Crust - Combine flour and brown sugar; cut in butter until crumbly. Reserve 1/2-3/4 cup of mixture. Press rest into bottom only of 9x13. Put reserved mixture into pie tin (crumbly - not pressed down). Bake both at 400- Pie tin for 5-10 minutes and 9x13 for 15 minutes. Allow to cool.
Middle layer - Mix cream cheese, vanilla, and powder sugar until smooth. Than fold in thawed Cool Whip. Spread over cooled crust.
Top Layer - Cook Danish Dessert according to box pie filling directions. Let cool. Add raspberries. Pour this over cream cheese layer. Top with reserved flour mixture crumbs.
Refrigerate until time to serve.

If using Jello instead of Danish Dessert:
1 large box Raspberry Jello
1/2 cup sugar
2 1/2 cup boiling water
2 Tbsp lemon juice
Follow jello box directions and let cool but not completely set before adding raspberries.
