Black bean Soup

Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion chopped
  • 1 red bell pepper chopped
  • 1 carrot peeled and sliced
  • 3 garlic cloves minced
  • 2 cans black beans
  • 1 can chicken broth
  • 2 cups cubed cooked ham
  • 1/4 tsp cumin
  • 1/2 tsp salt
  • pepper to taste
  • 1 cup shredded Cheddar cheese
  • 1 cup sour cream

Preparation

Step 1

1. Heat oil in large pot over medium heat. Stir in the onion, pepper, carrot, and garlic, and cook 5 minutes. Mix in 1 can beans and chicken broth.

2. Mash remaining can of beans. Mix into the pot. Bring soup to a boil. Reduce heat to low. Mix in ham, cumin, salt, and pepper. Simmer 20 minutes.

3. Garnish with cheese and sour cream
