Chicken Salad w/ oranges & almonds

Ingredients

  • 1 Stewing chicken 4-5 lbs
  • 2 carrots sliced
  • 1 small onion sliced
  • 4 sprigs parsley
  • 2 celery stalks
  • 1 cup celery chopped
  • 1 - 11/2 tbs lemon juice
  • 1/2 tsp salt, freshly ground white pepper
  • 1 cup seedless grape halves
  • 3 med size oranges sliced
  • 1/2 cup mayo
  • 3/4 cup slivered almonds browned

Preparation

Step 1

In large stockpot cover chicken w/ cold water and bring to boil
Add sliced carrots, onion, parsley and celery
Cover and simmer gently until tender (about 2 hrs)
let cool in pot
Remove meat from bones and chop
Add chopped celery, lemon juice, salt, pepper, grapes, orange slices and mayo
Mix together and chill
Serve w/ browned almonds on top of each portion
