Ingredients
- 2 (15-oz) cans black beans, drained and rinsed
- 1 1/2 cups panko
- 1 (4-oz) can chopped green chilies, drained
- 1/4 cup minced green onion
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp salt
- 1 tbsp vegetable oil
- 5 tostado shells
- Corn Salsa
- Garnish: sour cream, avocado, cilantro
Preparation
Step 1
In the work bowl of a food processor, combine black beans, panko, chilies, green onion, chili powder, cumin, and salt. Process until mixture is smooth, adding water if necessary. Shape black bean mixture into 5 patties.
In a large nonstick skillet, heat 1 tbsp oil over medium heat. Add black bean patties and cook, in batches, if necessary for 3 to 4 minutes per side, or until heated through.
Place 1 black bean patty on each tostado. Top each with desired amount of Corn Salsa. Garnish with sour cream, avocado and cilantro, if desired. Serve immediately.
