Pumpkin Bars

Ingredients

  • Bars:
  • 4 Eggs
  • 2 Cups Sugar
  • 2 Cups Canned Pumpkin
  • 3/4 Cups Melted Butter
  • 2 Cups Flour
  • 1 Tsp. Baking Soda
  • 2 Tsp. Baking Powder
  • 2 Tsp. Cinnamon
  • 1 Cup chopped Walnuts
  • Cream Cheese Frosting:
  • 1/2 cup butter, softened
  • 8 ounces cream cheese (Room temperature)
  • 2 teaspoons vanilla extract
  • 2 teaspoons milk
  • 4 plus cups confectioners' sugar

Preparation

Step 1

Mix eggs, sugar, pumpkin & butter.
In a separate bowl mix Flour, baking powder, baking soda & Cinnamon with electric mixer. Add nuts, mix well & spread into an 11 X 17 baking pan.
Bake at 350 for 35 to 40 minutes. For a moist cake do not over bake.

Cool completely and frost with Cream Cheese frosting.


Cream Cheese Frosting:

Beat softened butter and cream cheese until well blended. Add vanilla and milk. Then gradually add the powdered sugar and mix well with electric mixer.
Add more powdered sugar as needed till mixture is stiff.
