Blueberry Crisp

A very quick recipe for this crisp with a little zing of a lemon and the brown sugar is the secret to the crisp topping.

Ingredients

  • 3 to 4 cups of blueberries
  • 1/4 to 1/2 teaspoons grated lemon rind
  • 1/3 cup sugar
  • 1 tablespoon corn starch
  • CRISP
  • 3/4 cup oatmeal
  • 2/3 cup light brown sugar, packed
  • 1/4 teaspoon cinnamon
  • 1/2 stick butteror margarine
  • 1/3 cup flour
  • a pinch of salt
  • TOPPING
  • ice cream
  • whipped topping
  • cream or milk

Preparation

Step 1

Preheat oven to 375.
Lightly grease a 9 inch square glass baking dish. Combine first four ingredients and pour into bottom of dish.
CRISP
Place flour,oatmeal, brown sugar and cinnamon in a small mixing bowl; use a pastry blender to cut in butter or margarine until mixture is crumbly. Sprinkle over berries. Bake for 30 minutes or until topping is golden brown. Serve warm with your favorite topping.
