Meatloaf with Spinach & Feta

Ingredients

  • 2 lbs. lean ground beef and pork mixture
  • 3/4 c. finely crushed breadcrumbs
  • 1/2 c. milk
  • 1 egg
  • 2 carrots, finely grated
  • 1 onion, finely grated
  • 1/2 t. salt, plus freshly ground pepper
  • 1 t. crumbled dry herb (oregano, marjoram, etc.)or more
  • 10 oz. pkg. frozen spinach, thawed, drained and chopped finely
  • 2 oz. feta cheese

Preparation

Step 1

Preheat oven to 350° F.
Mix all ingredients except spinach and cheese in a large bowl.

Cover a rimmed baking sheet with a piece of waxed paper. On the waxed paper, shape the meat mixture into neat rectangle about 9" x 13", keeping the thickness even. spread the chopped spinach over the meat. Crumble the cheese and spread over the spinach.

Starting from a short side, use the waxed paper help roll up the meat, jelly-roll fashion, into a log. With moistened fingers, press and pat the ends shut and seal any cracks in the log.

Remove the waxed paper and bake in pre-heated oven about 45 min., or to 160° at the center.

TIP: Use the extra space on the baking sheet to roast cut up potatos
